Soy Lecithin: Information
Lecithin (LESS-i-thin) is a mixture of nutritious fats called phospholipids, and is found in every living cell. Soy lecithin is derived from the processing of soybeans, and is used by manufacturers as a food additive in addition to being a dietary supplement. Lecithin is usually consumed in adequate quantities through a healthy and balanced diet.
Health Benefits
Research shows that soy lecithin may help lower cholesterol levels by physically binding to cholesterol in the bloodstream. Soy lecithin is also thought to have antioxidant properties, may help alleviate the symptoms of liver disease, and may be beneficial to those with multiple sclerosis. More research is needed, however.
